In addition to it's typical use, now that Grease is non-flammable, you can use it as a fire suppressant. IT WON'T BURN! Need to rescue someone surrounded in flames? Grease will smother the fire, then reach out and have them grab the end of your staff as you pull them across the grease to safety. Need to protect something that must pass through a fire hazard? Cover it with Grease, then push it through the fire. Need to protect part of your ship, like the sails, from fire dragon breath? Grease them up. Yeah, I know it only covers a 10x10ft area, which may not seem like much. But that's usually enough to rescue someone or protect a small area at least. And since it lasts a minute, multiple castings can cover a larger area if necessary.
Making it non-flammable may have nerfed the extra damage potential, but I think it has more utility.
The Grease spell doesn't say it smothers fires, nor does anything in the spell do anything that would logically smother fires, therefore it doesn't smother fires. Spells do what they say they do. In this case, it's just creating Difficult Terrain.
A. You can't target a creature, yes, but you can center it on a creature
B. It smothers fires for the same reason water does: it takes away the oxygen it needs to burn. It probably won't work on magical fire though.

That would be a house rule. RAW makes no mention of the grease spell’s effect on oxygen. And water’s effect on fire also has a lot to do with reducing the temperature. There are other tools which deprive a fire of oxygen.
I wouldn't have a problem with allowing it extinguish small fires, but given that you can do the same thing with several cantrips... (also, it coats the ground, not objects in the area, and usually it's the objects that are burning, not the ground).

Nonflammable does not mean fireproof, it means it won't ignite.
And that may be all you need for a short time.
Sure, but a bucket of water will do the same thing. Pretty much all it will do is prevent you from acquiring the burning status.
