If your DM is creative and has the time I know that when my players want to play with the survival aspect of food once they have a place of their own they can have a garden (or a farm if the plot is large enough) and on the downtime between sessions we roll to see how successful the harvests were. I would say that collecting the horse droppings would add either a flat bonus to that roll or could be used as a bonus die (d4 or d6) to spice up the randomness a little bit more.
Another use could be used in combat as a distraction, as in, throwing it at an enemy trying to blind them. Just like you would throw sand. Maybe instead of blinding them, however, you just make them lose their breakfast because of the awful smell that is now on their face.
I would just get creative and make sure you have an open dialogue with your DM to make sure it's alright. I know that some of the most creative and non-destructive things come from my players when they just want to do something that's different and fun.
When in a small compound, I gather about 10 lbs of dry horse dung, besides good for starting camp fires, any other good uses?

You can also use fresh manure to mask scent when hunting or being hunted.
