For accessible resistances you can't beat the Bear Totem Barbarian - though they aren't permanent. You only get them while Raging - which is usually trivial to achieve.
If you want permanent then you'll have to look into specific races and feats. For example a Tiefling with the Infernal Constitution feat gets 3 (Fire Cold and Poison). Aasimar inherently get 2 without a feat (Necrotic and Radiant). There are many other races that get 1 resistance.
As for class you're probably going to want Paladin - Oath of the Ancients level 7 for Aura of Warding which gives resistances to spell damage to you and anyone within your aura radius.
You’d want to have 6 levels of Storm Sorcerer for resistance to thunder and lightning damage, 6 levels of Celestial Warlock for resistance to radiant, and Tiefling with Infernal Constitution for fire, cold, and poison. Then take 7 levels in Rogue for Evasion which has the same effect as resistance for any effect that has a Dexterity saving throw or 7 levels of Oath of the Ancients Paladin for resistance to damage from all spells.
I would second the bear totem barbarian. It's very easy to pretty much always be raging and it gives you resistance to every type if damage except psychic. You could gain resistance to psychic damage by picking the Kalastar race from the new Eberron book. They otherwise wouldn't make very good barbarians though.
You could also go with Yuan-ti pureblood as your race for the magic resistance trait. It's a little different than actual resistance but gives you advantage on saving throws to spells and magic effects. That's pretty amazing. You'd also get poison immunity. It doesn't give you resistance to any damage types and would also not a make a very good barbarian.
A little outside the box idea would be to contract lycanthropy. That actually gives you immunity to non magical weapon attacks that aren't silvered. It's not something you can necessarily decide for yourself though.
Okay so after some experimenting I have this concoction:
- Asamir; Necrotic and Radiant
- Storm Sorcerer; Thunder and Lightning
- Forge Cleric; Fire
- Infernal Constitution; Poison and Cold
The total level for this is 12, but if you wanted to go a little further you can add in a Paladin of Ancients to get resistance to all spell based elemental damage, and immunity to disease.

Just don't stop raging, and You are virtually unkillable.
A Battle Smith Artificer at level 11 can put Warding Bond in a spell storing item, give it to the Steel Defender, and get resistance to all damage for 10 hours a day.

It's a bit limited, but a 7th level Oath of the Ancients Paladin has resistance to all damage from spells, and can extend that defense to all allies within 10 feet. Not much use against environmental hazards or magical weapons, but still it's a huge boost to resistances. Pair that with Satyr or Yuan-Ti to get advantage on spell saves and suddenly you're practically untouchable.

You can't get infernal Constitution as assimar
Be able to cast wish. Then cast wish over and over again until you - and your party - have resistance to all damage types.
