So I’m playing a Mystic with Order of the Immortal as my subclass. With the Immortal Durability feat would my ac with a constitution mod of 4 and dexterity mod of 3 be the 17 from the feat or would I add the 3 again to make it 20?
17. You might be able to understand that more easily if I tell you about the rule that says, "If you're not wearing armor, your base AC is equal to 10 + your Dexterity modifier."

Generally you only add a modifier once in any given situation. The exceptions are things like Expertise where it states "Double your Proficiency bonus".
