Everything 6th level and below is fine, but the 11th and 17th level features need improvement. The 11th level feature shouldn’t be new Brews, but instead additional effects to the other brews. Change the name to intoxicated arts or something. While benefiting from your mastic brew you also gain blue lightning and drunkards luck.
The 17th level ability needs a single target option or allow redirect attack to go back to the attacks. Honestly I would want all three options. Intoxicating Frenzy Drinks all around- the normal feature with no changes letting you get additional attacks. Shots, Shots, Shots- After hitting a target with an attack from your Flurry of Blows the next attack to the same target from the same Flurry of Blows does an additional MA die+ your Wisdom modifier of damage. Why are you hitting yourself- when you use redirect attack you may expend an additional focus point to allow it to hit the attacker.
Pretty sure the Mystic Brew, technically, doesn't do anything. It says you brew up the potion when you finish a rest. But it also disappears when you finish a rest if not drunk. And it takes a minute to drink. So maybe I'm being a bit pedantic but as written, when you finish your rest, you would brew up your potion which would then immediately disappear before you get a chance to drink it :)
The third level ability feels weak to me and besides the new ability at level 6 the other one is also almost completely worthless as well because you are likely using your reaction on deflect attack/energy. I would much rather the tipsy sway add to deflect attack than it do what it does right now. Something along the lines of you can redirect an attack with deflect attack/energy even if you don't reduce its damage to zero I think would be more flavorful and more fun.
As far as i understand it, you can have the effects of multiple brews, if you spend ki, and have at least 1 short rest per day.
So the level 11 feature is kind of letting you get multiple effects, with the limit that it only occurs after your first short rest.
The level 17 is definitely under performing, even if you read it more generously as onky the attacks added by the feature needing to be on secondary targets.
its OK that they are better at hitting multiple targets, but the level 17 feature shouldn't have zero effect if there is nit multiple targets.
I would also personally add something to te level 3 feature, as its not that impressive in comparisson to other monks, especially in the context of 2024.
way of the shadow uses darkness to take no OP attacks.
way of the elements uses push/reach to avoid op attacks
open hand uses addle/push to avoid op attacks.and eventually automatically gets step when they flurry
Does it have some unique uses? sure, but these other features do more than just allow players to avoid opp attacks.
And, if the game alllows older content, mobile feat is also in competition.
So: improve level 3, and improve level 17.
Also, might be nice if you could drink/create brew as a part of uncanny metabolism

There's nothing preventing you from being simultaneous under the effect of 2, or even all of the listed brew options except the time requirements of taking a short rest hour to prepare a new one, and spending the Focus point to make the duration 8 hours, and quaffing each one. If you've got four more hours to prep in the morning, you can make and drink all five Mystic Brews and have them all active for at least another four.

That doesn't really make sense with the new naming convention for Monk subclasses, but "Warrior of the Tavern" might be good? I don't really understand why people don't like "Warrior of Intoxication", though, it seems fine to me.

I also dislike the very gamey play style promoted by attempting to get multiple short rest to have multiple Mystic Brew effects active. Honestly the brews should be something you actively drink in a situation not long lasting powers you try to stack beforehand.

I dont think its that 'gamey" for you to gain power by getting more drunk over time. (over the course of the day)
only being able to drink after rests, and drinks disapearing etc is kind of gamey, but most things in the game are tied to that very system for resources, and bonuses short rests/long rests.
If they arent using a short rest system, they would need a new, more complicated method for it to take time for the monk to get/maintain drunkeness, like counting drinks, or hours, etc. and that type of stuff everywhere else is tied to the resting system, usually

I was looking at the drunken master in the previous century. Go back maybe another 30 years older?

It’s a lot of loops to jump through for features that are almost all combat focused.
