The only thing I would consider calling required is the Player's Handbook, but Xanathar's, Volo's, and the Dungeon Master's Guide make good supplemental reading.

Are you looking to be a player or a DM? Do you have an interest in both?
The Player's Handbook, as mentioned, is your go-to book first of all. Especially as a player, but also as a DM. Beyond that, everything else is 'extra'.
If you plan to DM games then both the Dungeon Master's Guide and the Monster Manual are excellent sources.
Nothing more is truly 'required', but I will add that I very much enjoyed the Sword Coast Adventurer's Guide (SCAG).
beyond Xanathar's and Volo's are there other similar titles that give more races or classes? or do these three titles (PHB included) represent everything that would be generally accepted as character content at most tables?

There are two races (one a subrace, the other a variant of a race in VGtM) and two subclasses in the DMG and a dozen backgrounds (most of them setting-specific and/or not very imaginative), 11 subclasses (some of them reprinted in XGtE), four cantrips, and 9 assorted subraces and variants in SCAG.

As far as extra things like races and subclasses and backgrounds go, Sword Coast Adventurer's Guide is a big source, especially of spells. Curse of Strahd actually has 1 additional background. It looks like the upcoming Mordenkaiden's Tome of Foes will have some more additional goodies, as well.
But, those are all extra, the only thing required really is the PHB, and even then really just the free basic rules.
