I couldn't quite find an answer to this question anywhere. Though, I suspect my Google-Fu is weak today.
Could I create my own PHB to display between only myself and my players? That is, could I create a phb that is a mix between my content and official content? For instance, could I create my version of a dwarf that my players are able to select while not selecting (or even seeing) the official one? If this is possible, how would I get started? I would be forever grateful if someone could point me to a few tutorials Also, what subscription level would this be at?
If you create a campaign you will have the option to create DM notes available for your players to view. You may detail there any homebrew rules and whatnot. You can enable Content Sharing and any homebrew creations you have made (races, subraces, subclasses, backgrounds, magic items, feats, monsters) will be shared with all of your players. If you have purchased content (like the PHB) and you or a player in your campaign has a Master Tier Subscription then your purchased content (and those purchased by any other player in the campaign) will be shared with everyone.
This is about as close as you will get.
If this is insufficient and you want to make a single document then you will need to create it yourself externally, such as through a word editor like Microsoft Word, and make it available online using something like Google Drive.

You can homebrew as many races, subclasses, and spells as you want and share them with your group completely free and without having to publish them.
However you can't hide any official content from your players (yet).
As far a book or compendium goes, that will have to be handled completely by you with a word document or PDF.
