1. My homebrew bow shoots 3 times per action, it is 3 independent shots not a volley of 3 arrows, 3 d8 total.

I have no idea how this works. Does True Strike go for each arrow shot, so 6 total arrows as True Strike doubles each shot and there are 3 shots? when I get to the level where true strike adds 3d8, would my bow shoots 9 arrows each time?
This question is out of scope for true strike. There are no weapons in the game that work that way, nor would there be.
Such an ability would be structured to key off the attack action, and probably also limited to once a turn, or use a bonus action, to prevent high-level fighters from singlehandedly firing 24 arrows in a round.
Since it's your homebrew, you have to decide how it interacts.
True Strike uses the Magic action, not the Attack action. True Strike allows you to make one attack - not one Attack action. You only get the damage from True Strike once, so 2d8.

Its a homebrew that my DM made that increases with each Titan we kill, total of 3 upgrades. And each upgrade let me shoot 1 more arrow per attack
Since it's your DM's invention, you need to ask them how it interacts with True Strike. We here can only speculate, and we don't even have the item's description, much less the designer's intent. The DM's ruling is the only thing that matters here.

Ok. I can use true strike for 2d8. Then bonus action my bow 3d8 (warcaster) for a total of 5d8. Nice! That clears a lot up thank you!
That is not what War Caster does. Where are you getting the bonus action attack from?
