I am planning first to do the Snapping bite ability which I plan to do is 1d10+str modifier on lvl 1-2, 2d10+str mod on lvl 3-4 and so on... How can i do the snippet of that? And description im new to this whole creating race thing..

The snippet won’t change the actual attack, just the description. You will actually have to set the attack to scale, and then also set a “scale value” that mirrors it and use the snippet {{scalevalue}}. You can learn more about snippets by following the link in my sigline below.
What I would do is make a “race variant” of the Tortle, and then set which features will replace what that way. It would be easier than making a whole new race from scratch.
I will say that you’re proposed bite attack seems ridiculously overpowered. I would probably have it scale at the same levels as Cantrips, so 5th, 11th, and 17th. Be careful not to make your race too powerful or it won’t be fun after a while when all your friends are jealous and upset and everything is too easy for you. That’s no fun.
As for descriptions of stuff, the easiest way to do it is to find a regular description that’s close, copy and paste it and just change the relevant parts.

I didn’t say subrace, I said variant race. They work differently. But if you don’t have access to the Tortle then it doesn’t really matter anyway. Of course, you can just purchase the Tortle race for $2.99 if you’re interested.
Btw how do you a cantrip of 1th 7th and 15th? For the bite?
I assume IamSposta means to have the bite damage only increase at those levels, rather than every two levels as you originally proposed.
When I made my Brute (Large) Minotaur race this was something I wrestled with as the basic horn attack from the Ravnica Minotaur race felt a bit lacklustre as a charge attack with only d6 piercing damage that never scaled, so I decided to increase it to d8 for my Large Minotaur variant, and have it scale to 2d8 at level 8, and 3d8 at level 16.
However, I also limited the attack to only once per turn, as d8 is a very strong natural weapon to give a race; it's the equivalent to having a one-handed martial weapon (such as a longsword or a rapier) except that as a horns attack (or bite in your case) it doesn't occupy your hands at all. Having a free 2d8 or 3d8 damage on multiple attacks would definitely be too much IMO.
If you're going to do scaling damage then I'd recommend wording it as only replacing one unarmed strike per turn, as otherwise official races only get d4 or d6 natural weapons, anything more would be overpowered compared to those.

Definitely way too high; a single d10 at level 1 would be too high, 2d10 is the equivalent of attacking twice with a Pike (a two-handed, heavy, martial weapon). That scaling is also very high, 10d10 is similar damage to a 9th level spell, except you can do that every turn for free, potentially multiple times.
Again, for my Brute Minotaur (a 7 and a half to 10 foot Large Minotaur variation) I settled on d8 as a starting damage, 2d8 at 8th level and 3d8 at 16th, and only once per turn; that feels about right strength-wise as it's equivalent to a free martial weapon, and scales to do more damage than some magic weapons, but only once per turn. Bearing in mind this is for a Large (500 lb. average) race whose whole deal is charging you head first, so I consider d8 to be high for a starting damage.
For a snapping turtle I'd say no more than d6 (same as a Ravnica Minotaur's horns) and scaling to 3d6, and limited to once per turn. If you want more utility, add a bonus action or reaction to Grapple a target if you hit with the bite.

Alright then here's what im gonna do to the snapping bite.. ill change d10 to d6 and i forgot to mention that when it hits i cant move and bite again till the enemy i bit is dead...
Im going to change it lt as lvl 1(2d6) lvl 7 (3d6) lvl 14(4d6) 20(5d6)..
So a fighter torle can only do it once.. if the enemy he locked isnt dead..

The bite scale at lvl 1,5,12,17,20..

On a Fighter they could do that 5 times per turn. That is ridiculously overpowered.
