Mage Hand is basically telekinesis without a lot of strength, but still telekinesis. This beats everything to me, it beats auto-cleaning dishes and laundry, it beats flavouring my food etc.
You can eat chips and drink coke while gaming without having to remove your hands from the keyboard. You can pet the kitty without having to compromise which ever activity you're doing etc.
One of my big wishes in life is growing 2 extra arms, having telekinesis would be even better lol.

if you make a steel pipe with one end closed and a nozzle on the other, you can enlarge it, fill with any liquid, and then drop concentration, creating a high pressure squirt gun. (or a pipe bomb, depending if it holds)

I'm gonna go for Minor Illusion. It might be a little less useful than other options. But I sure do love the practical joke capabilities. And just generally, I feel like I'd use this a lot. Especially when I need to give presentations or explain stuff.

Actually, you just need a free hand to cast the spell. After that there's no restrictions on it.
Well presumably you need to see what it is doing, otherwise it is far more powerful than intended, especially for Arcane Tricksters. "What do you mean you are picking the house owner's pocket with your mage hand? You got your hand inside the building through an open window, but you cannot see anyone. You don't even know if anyone is home!" ...... "But the rules place no restrictions on it...."
Presumably, most people don't need it explicitly spelled out to them that a spell can't break an aspect of the normal restrictions on line of sight unless it says so in the spell description.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
I'd take thaumaturgy, because I could become a famous magician and make a buncha' money off it.
Thaumaturgy has very limited effects. It's useful in being ominous but little else. Prestidigitation would be better for this, given that the word "prestidigitation" means "conjuring tricks performed as entertainment" (in other words, magician tricks).
For example you could have a blank board facing away from audience, say you have predictions on there, get some answers from audience and right as you turn the board use prestidigitation to make the predictions appear before turning it around. You can also create the illusions in your hand like making it seem a coin jumped hands, and you can conjure small trinkets out of nowhere - give it to somebody, have them put it in a pocket then you perform another trick, conjure the same trinket and ask them to check their pocket - their trinket disappeared and it'll seem like you teleported it out. You can make fireworks appear. You can make fire suddenly swirl around you.
Prestidigitation lets you create any harmless sensory effect within 10 ft. That's a huge range of options alone. And make tiny illusions. And conjure trinkets.
