Yes to the stone golem thing and cool character idea
Actually, no to the stone golem thing. Stone golems are Constructs; Construct is a creature type, and only creatures have creature types. Therefore, stone golems are creatures.
I always have fun putting a unique spin on the typical mimic trope. That's not to say I don't love the OG mimic, but I also love creating my own unique mimics.
One of these unique mimic concepts is the Mimicrab: A large, soft-shelled crab that uses objects such as chests and barrels as shells. It hides in these makeshift shells to avoid bigger, dumber predators, while also being able to ambush any smarter prey that gets a little too curious. In the campaign I introduced them in, the players loved them, and were always curious as to what combat edges a unique Mimicrab's shell would bestow.

Actually, warforged are "technically" Humanoids, not Constructs. It says it right there in their description.
Mimics aren't limited to "non-living" objects (which isn't even a game term); they're limited to objects.
