Endermen are sorta easy. Just make a chamber where mobs can spawn. And put open trapdoors above water. Boom. Endermen will spawn even during the day, use a shield to blocks to blows while murdering.

In my 400 day world, I have the end portal lit, which is under a village, has 3 libraries, in which I found silk touch, efficiently 4, and protection 2 books, I have also found 2 ancient cities next to each other, about 4 trial chambers, 20 something geodes, numerous spawners, and a lot of villages. Full enchanted diamond armor and weapons. And each time I reach the point of beating the game...
Something happens, and the world either gets forgotten, corrupted, or deleted.
At that point, the end fight is going to be sad. Set a bed outside the end and just beat the game.
