For a Warlock’s Mystic Arcanum, can you cast other spells using it? For example, I am a 6 sorcerer and 11 warlock. I choose Flesh to Stone as my arcanum spell. Can I cast magic missile using that mystic arcanum?

I don't think so. Mystic arcanum is a feature on its own, it is not a spell slot.

Its not a spell slot, the feature allows you to case a specific spell once per day (similar to monsters that have 1/day spells).

Yeah, I’d love to use my second Mystic Arcanum for a 6th level spell instead of a 7th level spell and that’s a no-go too unfortunately.
