I wanted to create a Fairy Artificer with the Armorer subclass and was wondering if I would have to wear light armor, even if the strength requirement for ALL armor is removed, which you could argue would make the fact that the armor isn't light redundant.

The armor still counts as Medium or Heavy, regardless of STR requirement - same as if you wear Mithril Full Plate. So not unless you have a permissive DM.

RAW, no. There might be some races which allow medium, but it seems like you’re stuck with light armor unless you don’t care about flight.
