I just played my first game tonight (we're barely 2 - 3 pages into the story) its from the 5e 'starter' thing (where a Dwarf wants your party to help him with some big discovery)
Anyways, I picked the halfling rogue after much deliberation.
Our DM isn't new to the game but they're rusty. so I'm not sure if I or they are in the wrong.
So we're fighting the early story goblins and when I attack with my crossbow. I have a proficiency with crossbows.
I rolled a 16 so I hit, but didn't crit etc.
So I had to roll my 1d6 +3 piercing. It also says I have an 'attack bonus' of 5. and i have a dex bonus of + 3 if that matters.
I believe I rolled a 4 on my d6.
So the question is.. did I deal 7 damage (+3 pierce)? 10 damage (dex modifier/+3 pierce)? 12 damage (atk bonus/+3 pierce)? 15 damage (Dex, Pierce, Atk Bonus)?
What all would or wouldn't I be adding into a non-stealth and non-crit?
The attack bonus is what you add to the d20 to see if you hit or not. In your case, the attack bonus is DEX modifier + Proficiency (which is +2 at first level) =1d20 +3 +2.
The damage roll is given by the weapon and the bonus to damage is the DEX modifier only = 1d6+3.
ATTACK: To make an attack, you roll the d20 and add your attack bonus. You rolled a 16, add your attack bonus (16+5=21).
DAMAGE: Roll damage because your attack roll of 21 is equal to or greater than the target's Armor Class. Your crossbow does 1d6+3 damage. 1d6 from your crossbow + 3 damage from your dex modifier. You rolled a 4, add your damage bonus (4+3=7 piercing damage)

Ok, then what effect is my 'atk bonus' for if my 'dex' is the only modifier to my hit on the d20?
As next to my weapon (this is a premade starter character made by DND themselves) says +5.
Basically.. my character stats that (may) apply to this
Dex Mod = +3
Damage/Type 1d6 + 3 (pierce)
ATK Bonus (Center of character sheet between 'weapon' and 'damage/type') +5.
then you say proficiency adds '+2 at level 1'
Yes, you add the proficiency bonus to the attack bonus (by definition attack bonus is 1d20 + bonuses) when using the weapons you are proficient in.
I'd probably recommend check the section on Making an Attack - it explains which bonuses to use.

Like Sorce said, read that section. But the jest is:
attack modifier = DEX mod + proficiency mod
(5 = 3 + 2)
when you attack, you roll a 1d20 + attack mod to see if you hit
you said you rolled a 16, so you add your +5 to that and see if your result (21) hits.
If it does, which it did, you roll damage.
