I'm trying to flush out the backstory for an NPC in our campaign. The NPC started out as the mother of a Giant Soul Sorcerer Hexblood PC. I would like to expand her lore and use her as an NPC or BBEG in the future.
Here is all I have on her so far:
Canthrig Bwt. A two-headed Annis Hag based on the notorious, child-eating, giant Hag from Welsh Mythology
Her Creature type is Fiend not Fey
She is ancient and claims a noble birthright from the time of Ostoria
She may have originally been an Ettin or she may have modified her body (as Annis Hags can do) with the living head of another hag.
Any good ideas to flush her lore out further? Any ideas welcome.
Canthrig Bwt was formely Queen and Ruler of the Ettinmoors before the fall of Ostoria. One day she recieved a vision of Demogorgon and she was smitten and in her adoration of Demogorgon she proclaimed all should be as he. And so she enacted a grand ritual to become like her beloved. Drawing on the power of the Abyss she transformed herself, growing an extra head and as her magic flowed out so did every giant that called the Ettinmoors home grow in some hideous way and so were the giantkin now known as Ettin and Formorian born and as word spread of the magic she had unleashed they were they cast out of Ostoria.
Canthrig Bwt seeks to unite with her beloved Demogorgon and bring ruin to those non-Ettin/non-Formorian giantkin that remain on the material planes. Ever watchful and scheming, Canthrig Bwt plans are ever changing and always evolving. Stories tell of her vast knowledge and armies of Ettins and Formarian Giants that rise up from seemingly nowhere that chant her name as a battlecry.

Stat wise: Use Annis Hag as a base, add the Two Head and Wakeful traits of the Ettin, the Evil Eye and Curse of the Evil Eye of the Formorian Giant and the Innate Spell Casting and Magic Resistance of the Night Hag. Legenendary Actions: Use Curse fo the Evil Eye, Cast a spell or Make a Claw Attack.
Depending on what sort of level you expect the party to be to confront her as a BBEG she could also have a Coven and numerous bodyguards and you could adjust her Hit Points and Spell DC/Spell atk bonus accordingly. You could also increase the potency of her Iron Tokens to allow her to cast Detect Thoughts and Scry on someone using one of them.

So Cathring is a two-headed Formoiran Hag who admires/worships the Demogorgon? I really like that! I may add that the Demogorgon taught the Fomorians to use vile ritual magic associated with Soul Larvae thus corrupting and cursing the race. Cathring, however, also developed a taste for human and fey children as most hags do. It would makes sense lore-wise that the Fomorians would turn to the Demogorgon for power and suffer terrible consequences:
over time the Fomorians' hearts became twisted by a lust for power and magic that drove them to try and conquer the Feywild - Forgotten Realms Wiki
This is also consistent with one of the creation myths for Ettins (albeit Orcs rather than Formians were twisted into the first Ettins).
I'm going to take your stat block suggestions and put something together under my homebrew...Evil Eye followed by Crushing Hug! What a way to go.
I assume Cathring would be on par with a Grandmother-level Hag...not sure what CR that might be.

Of course, look at Volos to run hags better.
Statwise though, i see this being my homebrew Estranged Blood Charmer, with the modifications suggested for annis and night hags in volos.
