I want to buy either volos or mordenkians, but I'm not sure which one. Maybe Eberron or Wildemounte? Which one is better for players, in terms of races, subclasses etc. And which one is better for DMs? Any help would be greatly appreciated! Or should I just wait for rime of the frostmaiden!
(Note: I might not get any, but incase I do).

What kinda game do you wanna run? Pick a book for the setting you wanna be the DM for. Wanna do Ancient Greece, pick Theros. You wanna do Icewind Dale, pick up the Rime of the Frostmaiden. HOWEVER you can get the Sword Coast book if you wanna get more updates for races. A little bit weird but I found Ravnica a good book because of the magical items and Goblins and minotaurs which fit quite well in a Forgotten Realms setting.

Hadgar Greystone, Lv 10 Duergar Death Cleric. Call of Cantraxis campaign, Moonshae.
DM: Imperia Regnum Ancient Rome Theros Homebrew.
Gri'im the Red, LV 7 Orc Druid Rime of the Frost Maiden Campaign.
Mordenkainen's has the planar and boss type creatures, plus more drow, duergar, and gith.
Volo's has fey creatures and fey-like creatures, as well as more gnolls, beholders, and mind flayers.
If neither sounds particularly interesting to you, get Xanathar's if you don't already have it.
Otherwise choose one based on whatever setting you usually play or DM on. If you use a homebrew world, choose the one that's most similar to your homebrew setting. If you don't want to do that, don't get a book.
For what you've said you want, Volo's. It's full of races.

Any time an unfathomably powerful entity sweeps in and offers godlike rewards in return for just a few teensy favors, it’s a scam. Unless it’s me. I’d never lie to you, reader dearest.

Which book you buy depends on what you are looking for. I would recommend different books for players and DMs. and even different books for a DM.
If you are looking for new races and/or monsters along with lore for your existing campaign, then I would recommend Volo's
For monsters and lore about the planes, pick up Mordenkainen's
Eberron and Wildemount are campaign settings both have new races, classes/subclasses, spells, etc.
For a player I highly recommend Xanathar's Guide. It has a lot of subclasses, racial feats and other things for a player.
I'm not sure if that helps much, but if you could be more specific on what you are looking for it will help others give you better advice.
Good luck- TC

Volo's is probably the most popular book out side of the core three. If you want player races and creatures Volo's is definitely the way to go.
Xanathar's is the one to get for subclasses and spells.
They already have Xanathar's. And it really depends on whether they want boss/planar creatures or variations and monster lore.

"Which one is better for players, in terms of races, subclasses etc. And which one is better for DMs?"

Volos for races, Xanathar for subclasses.
As for me core three plus Volo's & Xanathar's is all I'd ever need.

Volo's and mordenkainens are full of "niche" monsters, so it all depends on what you want.
Lower planes: mord
more material plane monsters: volos
Volo's is best if you want really cool races. Lizardfolk is OP.
