Click dice icon at bottom-left. Click the cube icon for d6s a number of times equal to how many d6s you would roll for sneak attack. Click the big roll button.
If you'd like to set this up for 1-clicks in future, on sheet create a custom action named sneak attack, set damage to number of d6s for sneak attack, set as melee attack, don't set to hit or stat, set as 1 action. Check box for Display as Attack. And now you have this showing in your attacks on your sheet and can simply click it to roll sneak attack when you need to.
