Its probably just walking speed. The non-walking speeds are usually tied to your normal move speed unless otherwise given a specific speed value. So having a swim speed of 10 is worse then having a swim speed that is half of your walking speed as is normal. Also, All forms of movement would include a burrow speed which is something I believe PC's don't have access to in any form (unless this counts) as well as a flying speed which doesn't make much sense. I could understand perhaps a swim speed, crawling speed and climbing speed but flight, burrowing, and things like that are a bit much
Since it is generic "speed" and not specifically "walking speed", it applies to any speed you have access to. If you have a flying speed, such as from being Aaracokra or the Fly spell, you get + 10 movement to flying.
Basically, no matter the form of movement you're now 10 ft faster.
Note, though, it does not grant movement types - it won't increase swimming speed if you don't have one, so if you lack a specific swimming speed - swimming remains "half walking speed".

you have the option to get "An increase to speed of 10 feet while the creature is unencumbered"
is this all forms of movement (walking,swiming,climbing,ect) or just walking? (i think its the first option, but l want to be sure)

I would rule that it is only base movement speed.
