Multiattack. The golem makes two slam attacks.
Slam. Melee Weapon Attack: +8 to hit, reach 5 ft., one target. Hit: 16 (2d10 + 5) bludgeoning damage. If the target is a creature, it must succeed on a DC 15 Constitution saving throw or have its hit point maximum reduced by an amount equal to the damage taken. The target dies if this attack reduces its hit point maximum to 0. The reduction lasts until removed by the greater restoration spell or other magic.
Haste (Recharge 5–6). Until the end of its next turn, the golem magically gains a +2 bonus to its AC, has advantage on Dexterity saving throws, and can use its slam attack as a bonus action.
Is the max HP reduction cumulative? It would make sense if it was, but it doesn't actually say so. And game features of the same name don't stack.

How to kill a Tarrasque
did the math, a polymorphed (that being a max of 1 hour) clay golem rolling the minimun damage possible, could kill a tarrasque with the highest hp possible in the hour time frame with about 6570 overkill damage which is about 7 mins of spare time

Give a clay golem a gelatinous cube pet to heal it every round. The golem protects the cube and the cube heals with acid damage.
Clay Golems + Tasha's Caustic Brew. Regen 2d4 hit points (or more with higher level spell slots) every round.
I'm inclined to tweak the Haste action into casting the Haste spell on itself. It has no other Bonus Actions, so it's more or less the same as the extra Attack from Haste. And the speed boost should catch players expecting the RAW Haste action pretty flat-footed. Don't even need to actually attack, just Dash & move to be in melee with a caster who thought they were out of range, and they'll be panicking.

While all of that is true, you can use your movement and cast a spell in the same turn. So long as your movement speed isn't reduced, and the place you're at isn't less than 26 feet, you will always be able to move out of range of the golem, and so long as you can cast literally any damage dealing spell, you can kill it easily.

Huh, Warcraft III mud golem can cast slow, and these can haste.
What is a mud golem's haste based on, is there a mythological basis for this or did they pull that one out their butts?
And what about the max hp reduction and instant death? Is that... getting clay in your wound? Getting clay on your body?
Getting clay on your body doesn't make sense because it takes a whole greater resurrection to remove it. And why would that even prevent you from healing anyway?
It's nice that this creature has features, I just wish they didn't seem so random.
That wouldn't be safe, if it can dash up to you you're at risk of opportunity attacks.
