Description
A griffon is a ferocious avian carnivore with the muscular body of a lion and the head, forelegs, and wings of an eagle.
Well too be fair they're described as being loyal enough too die for their rider if they're raised by said rider with the only real problem attitude being the fact that they will hunt horses on their own if their rider doesn't feed them any so in my opinion I think they're worth the effort depending on the character training them.
Oh, absolutely. If you can successfully raise one, they are the best (and most prestigious) mounts in many settings. But, they are a big investment.
Rime of the Frost Maiden has rules on griffon training. Chapter 2, pages 163.
Griffon Taming
Goliaths of the Akannathi clan can learn to raise and tame griffons using secrets passed down through the generations. The clan's griffon trainer, Rahi, shares these secrets with clan members who show great wisdom. The goliaths don't ride the griffons; rather, they train them to hunt like falcons. The griffons are taught to respond to goliath whistles and never stray too far from their masters.
A goliath character who earns Rahi's respect can be taught the secrets of griffon taming over a period of 1 year, during which time the character is entrusted to watch over and protect a single griffon egg and, when it hatches, the emergent griffon youngling. At the end of the year, if the griffon is still alive, the character must make a DC 15 Wisdom (Animal Handling) check, with advantage if the character accepts Rahi's guidance. If the check fails, the character is unable to tame the griffon. If the check succeeds, the character tames the griffon and bonds with it for life. Control of the griffon can be given to the goliath's player at this time.

Here's my story about Griffons that were mistreated and forced to do the bidding of a vicious pack of Orcs. This story was used to explain my character's backstory around the campfire one night with the rest of my companions. Let me know what you folks think! WARNING: It's a graphic/long read.
Krueger's Orc Story: This was about 10 years ago while I was in His Majesty's service. --- I was in command of a scouting party of 20 men stationed west of Mt. Hotenow. Our objective was to watch the Northern Road and report back to Neverwinter upon sighting of the enemy. Reconnaissance. We were roughly 3 days march North of Neverwinter ---camped out for weeks waiting for signs of movement from a particular group of notorious Orcs that we had heard were aiming to loot Neverwinter. It was said that when those beasts attack there's nothin but severed limbs, pools of blood, an overwhelming feeling of despair in any path that they take. ---- With these details being known about this particular group of Orcs the men's morale was low to say the least. Given what we knew of these orcs and given my experience in forests as a young man I assured my men of an absolute command that would enable us to track them and report back. We had men on watch every night. When the moon was but a sliver of light in the sky the watch was doubled. Well what do ya know, on this particular night the moon was dimmed, the night was quiet, and all seemed to be well. Until morning... We lost all 6 of our watchmen in the night. That morning was utterly dark in every way you can imagine. I was shaken, my men had already faltered, and I climbed the highest tree I could find to discover if there was any clues I could find. I thought to myself "These men are my responsibility, I must find what we're up against here" I reached the highest branch of a Great Whitewood tree that towered over the horizon like a monument to the Northern Kings of old. As I peered out I saw what appeared to be a few dozen Axe Beaks and a camp that I could only imagine housed at least 20 orcs. I climbed down the tree so fast I almost fell. Given the urgency of my descent the men were at a lost for words, even more terrified now. I explained to them what I saw. I gave the order to fall back, a scouting crew probably killed our watchmen in the night and would undoubtedly be back within half a days march We abandoned camp, and flew as our lives depended on it. I hear the howl of their Axe Beaks and I knew they'd be upon us soon. Half the day went by moving as fast as we could and I knew were weren't going to outrun the party of orcs ---- This is when I remembered my Major's story of orcs back at our station. They have an insatiable lust for blood. We came upon a cross roads given one road to the South East and one to the South West. Given my expertise in medicine and care I proposed a way to outrun them and ensure our escape. "We have to throw them off our trail, we're dead otherwise, they outnumber us and it's those Axe Beaks will rip us in half before the orcs arive--- they'll be here within the next hour if we don't do something. Trust me men, we can get of this." I proceeded to cut my own finger off with my blade and scrape my flesh on an May tree next to me. "Now men, Lucre, Baddar, and Silahdir, do the same. We'll throw them off our trail with all our scent and take a less common road, our own flesh will save us this day. The Axe Beaks will hone in our our flesh and abandon all other scents" This sent a shock through the whole group, all ther men cowered and were hesitant, who can blame them. This was an opportunity for one of my most disgruntled men to step up and claim dissolution of my command. Munaleiver.. That man hated me, we were in the same training corps together at the start of it all and I progressed faster and always had the approval of the commanders. He was an envious man. He told the crew that I had gone psychotic with fear, that my senses were dimmed, and that I only wanted to sacrifice their blood for my own survival. That I was a coward. Perhaps it was the Axe Beaks howls intensifying or the fear of hungry orcs soon to be devouring us if we did not escape but the men's courage faltered and they gave in to Munaleiver. They started hurling insults--- rage, frustration, and utter fear in their eyes. I was the psychotic commander, why not execute me and really throw them off the trail. They were approaching me with an evil laugh that made me think they were almost possessed by their inner desires for survival, they were barbaric in their approach. Then came swooping in 3 Axe Beaks and ravaged 4 maybe 5 of my men. I cannot recall, blood everywhere I took this advantage to hide in the shrubs to the side of me. My men were so terrified by the howling, and screeching of these dark beasts that they couldn't even defend their selves. All of them were brutally wiped out in what seemed to be a moment. I heard an Orc horn in the distance all 3 of the the Axe Beaks immediately stopped gorging their selves what were my men and zig zagged through the trees much like a cat in an obstacle coarse I've never seen anything like it, and they were off. Their wings and muscular bodies serve their mobility well, but... anyways.. I was beside myself, but I conjured what courage I had left in me and returned to my men. Most of them ripped to shreds at this point, I noticed Munaleiver was not amongst them, he must have slipped off during the chaos... the disgusting man, if my men weren't approaching me in such a way we could have slain the Axe Beaks. WE WOULD HAVE SURVIVED! I'LL FIND MUNALEIVER. I'LL FIND HIM. (breath) Sorry.. Anyways.... It dawned on me, in my pack I always had herbs that can serve as healing, if mixed in an unconventional way they may also be mixed as poison. I also had gunpowder.... I made the poison with my mortar and pestle, made a black powder grenade that had all my powder in it as well as my men's. I mixed the poison into my men's flesh, every last one.. and planted the black powder bomb in the middle of the carnage, that thing was heavy.... I secluded myself in the dense thicket.. Waiting for the orc party. I had never been so utterly nervous in my life but... I wasn't about to allow my men (as cowardice as they were) to die in vain. The small hoard approached and were laughing in glee when they saw the blood soaked ground as they drew closer, the finger I had cut off caught the eye of the leader and they were all watching on as he picked it up, examined it, and took a large bite out of it with his sharpened rotting teeth. (Orc voice) "Quite the meal we have here boys, haha!" They proceeded to arm themselves with their sabers, laughing and kicking the heads of my men while doing so. They commanded their Axe Beaks to eat the corpses to the side, as they began butchering up the human meat amongst them. I was nervous that a select few would not come close to the hidden bomb and eat, but all of them bloodied their faces with the flesh. Axe Beaks made quick work of cleaning the femur bones of any remaining bit of fat and tissue. The poison laced in my men's bodies was quick set poison which rendered the body partially paralyzed. It's made specifically from the mushrooms known as webcaps, these mushrooms are often used in disinfectant with small doses but highly effective as an undoubtedly painful nervous system poison if used in higher quantities.

I am also playing in this campaign, not your obviously, as a sword bard, with a sister whom has a higher chance of being dead then alive…if I find a griffin egg I will let you know
Yes but it'll cost a lot. First off you'll need to find the egg or have someone find the egg (If you hire someone to find an egg it'll probably be in the range of 500 gp for such an adventure to get the egg alone) then you'll need to raise it from birth to be combat ready and accept your commands (Which will be a lot of time and a lot of money, not many people are too open to put a griffon next to a bunch of horses so you'll need to handle that) and also you'll need food and they have a big appetite, the training is just a lot of time and money for training costs if you hire someone or some very good animal handling checks, you'll still have to feed it after it's trained and will require a lot of attention and a way to keep it away from horses, overall not a good idea to train, just buy a scroll of find greater steed.
I would allow it. The griffon's intelligence is 2 (which is animal intelligence), and the stat block does not list any languages; so quite logically, it should speak eagle and Speak with Animal should certainly work.

Actually, quite logically, Speak with Animals allows you to speak with Beasts and the Griffon is not a beast. It speaks Griffon. That said, I'd totes allow it at my table.
