If you want a mount with flyby, Peryton is your best bet. Alternatively, Wyverns effectively have flyby against a lot of targets since their attacks have a 10ft reach. You could try doing a similar method on a Pegasus-back by wielding a polearm or lance or other such weapon with 10ft reach :)

They're celestial because the species originated in a celestial plane, where they serve the elven gods. It's literally explained in the "Born of the Planes" section of the creature description.
Flyby and a mount's attacks are sadly not as usefully as you might think. Based off the Controlled Mounts rules listed in the PHB, mounts can only take the Dash, Disengage, and Dodge actions. So the peryton's Dive Attack can never be utilized nor the wyvern's reach. As a DM though, I would say that the extra 2d8 from the Dive Attack can apply to the rider's attack. But this would be a home rule and not every DM would agree to this. So, the only actions a mounted peryton can take are the Dash and Dodge actions, because Flyby is a built in Disengage.
Statically speaking, a pegasus is better if you are taking about a steed from Find Great Steed spell. Compared to a pegasus, a peryton's overall stats are much worse. A peryton has a slightly better AC, but that can be fixed with barding. A pegasus has the fastest fly speed. It, also, shares the highest HP, but it has better stats across the board, 10 being the lowest. Combing this with your Aura of Protection (assuming you are a paladin), the pegasus will be able make more saving throws and stay in the fight longer. Just have it take the Disengage action to prevent opportunity attacks on you or your steed. Sure the peryton can take a Dash to out pace the pegasus and not get opportunity attacks, too, but 120 ft. compared to 90 ft. is not that big of an advantage. You can take 45 ft. to get into melee and 45 ft. back so most creatures with 30 ft. of movement cannot close the distance for melee attacks.
Wyverns are CR 6 so do not apply to Find Greater Steed. But if you are able to get one as mount somehow, they do have more HP than a pegasus. However, you will not be able to utilize their attacks. Also, perytons are medium sized creatures so only small humanoids can use them as mounts.
You are right that a polearm or any reach weapon is not a bad option while mounted. It frees up the mount's action for a Dash or Dodge.

Could you make or buy boarding for a pegasus? Or, would that only apply to beasts. (That would be silly, if so.)
