Why do cats not get darkvision in this edition? This is otherwise a perfect combat form for a circle of the moon druid.
Why is damage a +5 modifier? Shouldn't it be +4 because its Str score is 18?
1d8+1 as base damage, +4 thanks to the Str Bonus.

One problem I have with this creature is that for whatever reason it's a CR 2 predatory beast that does not have multiattack. Sure it can possibly have it when using pounce,but I honestly think that it should simply have multiattack and then on top of that it could pounce. Maybe just increase it's CR to 3 if that seems too strong for CR 2 creature. As it stands this thing is simply underwhelming and I don't really see any reason why anyone would turn into this thing instead of a cave bear for example. I mean come now this tiger doesn't even have darkvision but the cave bear does. To me it just doesn't make sense that a Saver-toothed tiger is less deadly than a giant elk. These things used to hunt Mammoths.
The lack of additional attack is baked in as part of the pounce maneuver. Its situational, and allows the CR to be lower.

So in D&D, dark vision is the ability to see in complete darkness, with no light source whatsoever. Cats can see in near darkness as long as there is a little bit of light as their eyes can see fainter light than us.
Have been playing this game for a long time and all your ideas are great. Give it dark vision and muti-attack, yeck increase it CR to 3 if you like. Remember they want 5th to be more open like 1st. If something seems wrong to you change it. why not? Are the wizards of the rules going to knock down your door and take away your rule-books... no
Somehow this creature has more hit points than a Cave Bear...
I have come to notice that the dc for the Saber-toothed Tiger's pounce is off by one. It should be 15 not 14 by rules as written. 8+ proficiency bonus + ability modifier is the correct formula, if i'm not mistaken. This is making world building very hard considering that dc's are wrong on on almost all the beasts.
This is a really bad argument for why 5e cats don't have darkvision. Owls also need some small amount of light to see, as do octopuses, but they both have darkvision in 5e while the cat does not.
Isn't the proficiency for a CR2 +2? Thus 8+2(prof)+4(str) is 14

Also Tabaxi have Darkvision here what it says about them “Darkvision. You have a cat’s keen senses, especially in the dark. You can see in dim light within 60 feet of you as if it were bright light, and in darkness as if it were dim light. You can’t discern color in darkness, only shades of gray.”
