Undead Fortitude. If damage reduces the zombie to 0 hit points, it must make a Constitution saving throw with a DC of 5 + the damage taken, unless the damage is radiant or from a critical hit. On a success, the zombie drops to 1 hit point instead.

BELOW ARE THE ABILITIES OF EACH DIFFERENT VARIANT

Frenzied. The Zombie gains a Bite attack (See Below). When this attack hits a living humanoid the zombie becomes frenzied for 3 rounds. It's movement speed increases by 20 ft. and it has advantage on all attacks.

Bite. Melee Weapon Attack: +4 to hit, reach 5 ft., one target. Hit: 3 (1d4 + 1) piercing damage.

Maggot Riddled. The Zombie gains the ability "Spew Maggots" (Recharge 5-6). Maggots erupt from the zombies mouth in a 10 ft. cone. Creatures must make a DC 11 DEX save or be covered in maggots dealing 3 (1d6) piercing per round for 3 rounds on the zombies turn (no action). The afflicted creature may use it's action to make an additional save though it will be a DC 11 CON save.

Riser.  The necromantic energies holding this corpse together are incredibly tenacious, in some cases emanating small wisps of dark fog from the undead body. After being killed, unless it's with fire or radiant damage, the zombie rises from death one more time 1d4-1 rounds later (Min of next round).

Cursed. For one reason or another this zombie has gained access to a minor curse. The flesh on its fingers has peeled back revealing glistening white bone that seem to emit a black wispy fog. It gains the following attack.

Curse Claw. Melee Weapon Attack: +3 to hit, reach 5 ft., one target. Hit: 4 (1d6 + 1) slashing damage + 2 (1d4) necrotic. Additionally the creature must make a DC 12 CON save or take an additional 2 (1d4) necrotic damage on it's turn.

Juggernaut. This hulking behemoth of a zombie appears to have ribs and various bone chips on the outside of it's body. It's AC is raised to 13, has Max HP (33) and has Advantage on rolls for its Undead Fortitude Ability.

Symbiotic. This appears to be a regular zombie (though it has resistance to psychic damage). However upon its death an Intellect Devourer bursts from it's skull. This intellect devourer is no longer able to use Body Thief  and has it's DEX score reduced by 2.

Vengeful Spirit. This zombies eye's seem to flicker with a faint green light, though otherwise appears normal. When this zombie is killed whats left of it's tattered soul rises from the body to make one last attempt at the attacker before leaving. This spirit makes the Slam attack in the stat block immediately after the zombie is killed (interrupting initiative at intiative 10 or lower) it has 1 HP and an AC of 12 and immunity to nonmagical attacks. It attacks the creature that killed it  (if it's within 10 ft.) or otherwise attacks a living creature at random within 10 ft.  If no such target exists the spirit will remain for 1 round (with the same stats as a zombie) before disappearing without a trace.

Slam. Melee Weapon Attack: +3 to hit, reach 5 ft., one target. Hit: 4 (1d6 + 1) bludgeoning damage.

Description

Undead zombies move with a jerky, uneven gait. They are clad in the moldering apparel they wore when put to rest, and carry the stench of decay.

These variants are made to balance with just one at a time. Adding more than one to a Zombie will further increase it's CR. Also Keep in mind not all of these variants are of equal power.

Finally I didn't come up with the idea for all of these on my own, though unfortunately after hours of looking through forums and the like I have forgotten where the ideas for or in some cases exact abilities for the Frenzied, Maggot Riddled, and Riser  variants came from.
