This is because the value you enter is what you try to set the score as, but the sheet doesn't allow a stat of 0. Therefore you need to remove the value -- set it back to blank.

I kinda wonder why it doesn't allow a stat override of 0, given that the (worst immediate) outcome of an Intellect Devourer's attack is that your INT drops to 0.

I believe because you die if you have a permanent 0 of any stat, so it wouldn't have any purpose, though it would be funny if you did that and came back to the character is dead.
Was playing with the override feature on my INT stat and now the lowest it will go is 1.
Your help/explanation of what I did wrong would be awesome. New to D&D Beyond.

Try to just go into the text entry box and remove the number entirely rather than setting it to 0.
