I created an Eladrin (the only option was variant) which shows the Intelligence +1. Is there any way to get the other option (non-variant) or to choose the Charisma +1 over Intelligence? I feel like I must be missing something.

There are two versions of the Eladrin. One of them is free access to everyone, the other is unlocked with purchase:
The non-variant Eladrin looses Elf Weapon Training but gains seasonal effects to their Fey Step.
The Variant’s Fey Step is a spell that can be countered and requires V components (so you can’t cast it if you’re gagged or in silence); the non-variant version is not a spell, requires nothing, and cannot be countered.
The non-variant is technically fully official, but the variant is technically only semi-official (or mostly-officialish) as it was originally just an example of “how to homebrew” for DMs in the DMG. Most folks don’t even make that distinction though.
