I'm not seeing tritons as an available race on DND beyond, and I'm not seeing volos anywhere in the marketplace to purchase?

You’re not seeing them because they’re not free content, and you’re not seeing Volo’s Guide because it’s been discontinued. You can purchase the updated version of the Triton from MotM: (https://www.dndbeyond.com/marketplace/sourcebooks/mordenkainen-presents-monsters-of-the-multiverse).
