I wanted to give the beast master archetype to my ranger, but I only have access to the Hunter achetype . I have the player handbook and the subscription it also stop me from using other otherwordly parton than the fiend for my warlock .
I can see the option when I create the ranger myself . But not when they edit or I try to edit their characters
I guess you have the Master subscription, so the next logical questions would be: Are your players' characters in a DDB campaign with you? Is "Content Share" activated in said campaign?
Check especially that content share is activated, sometimes it can get a little buggy and deactivate, or not work properly the first time. If so, try deactivating and reactivating it.

Note= Those are my players Characters .
If you've purchased the Player's Handbook from the D&D Beyond marketplace and still can't see those options, try clearing your cache.
If you're still having an issue, you can try contacting support for more assistance.
