I can only see/select one fixed archetype per class and I'm not sure if that's a future still in development or if that's a feature that's only available in one of the subscriptions.
I couldn't find any information on this, so I hope this is a bug or a feature still in development
The free content (SRD, Basic Rules, Elemental Evil) will always be free, regardless of who it comes from, so you will always be able to use that content without pay. Everything that is in a published book will have to be purchased, much like owning the physical book, in order to be used. This has always been the plan with D&D Beyond, from day 1, and has been public knowledge.
EDIT: Every single character I have made up until this point (counting 4 of them) have been made using nothing but free content.
Regardless, the pricing details have been laid out since the 8th of August. The pricing has been discussed from the very beginning, without giving full details. Were you honestly expecting to be given all the WotC books for nothing?

You will have to purchase the content that isn't considered free. Check the Marketplace for anything you are interested in.
A dwarf with a canoe on his back? What could go wrong?
So, what good is it to offer a free service if you cannot make characters?

It's like you've been given a free cheeseburger and complained that there's no bacon in it?

More like you've been giving a cheeseburger without cheese nor burger, but sure.

You've been given a free hamburger. If you want cheese, bacon, sesame seed bun or whatever, you need to pay.
