Just to clarify, do you get access to monster stat blocks for purchased “Compendium only” content within the encounter builder?

All of my purchases have been for full books so I have no way to compare.

Nope. Compendium Only is just the ability to read the books. Those purchases do not include the interactive bells and whistles of the website.
