When I insert my changed health and go back to the character sheet the health just hard resets back to what I had it before.

This sounds like a server caching issue. Log out and back in, that triggers the server to refresh it’s cache. Then just wait around 15 minutes to give everything time to catch up. Try it again after that, it should fix it.
