Recreating as a monster would be difficult and time-consuming. Is there a reason you can't just click Copy on your character and use the second sheet that way? It's what I do. Click copy, remove the items, and bam you're good to go.
Sure it won't be on your character sheet, but you can just switch between them as you need rather easily, even using the App, and it will be easier to manage the sim's inventory and resource use (which you cannot do for monsters even if added to sheet).
Just seems like the easier route.

Is there a way to add a Simulacrum to a cahracter sheet, the same way you can add a mount or familiar?
