I'm making a A half-elf of aquatic heritage but it's forcing me to take Swimming Speed...? it says I can forgo Skill Versatility and instead choose a swimming speed of 30 feet... but I would rather have the skills and there is no way to choose one or the other.
For that, just choose regular Half-Elf. The only difference between an Aquatic Half-Elf with Skill Versatility, and a standard Half-Elf is the word “Aquatic.”
That's how picking an aquatic half elf works mechanically; you have to forgo the skill versatility in order to pick a swim speed otherwise it's just a half elf.

I guess I can just ask my DM, the Aquatic part was only for Flavor anyway.

Yes, technically it is optional. There are however limitations on how many ways the thing can be programmed on this website, and having multiple different Variants for the Half-Elf, and having two versions of each variant when half of them would be the exact same as the standard version just didn’t make sense. At that point, since all it would be is flavor, it is mechanically identical as taking the standard Half-Elf and just adding the “Aquatic” part as flavor.
If it really means that much to you, make a race based off of the regular Half-Elf as a template, and just change the name to “Aquatic Half-Elf.”
