I get to 16 so i don't screw myself out of an ASI but then at 17 my martial dice go to d10s so i can't seem to talk myself out of spending 1 more point into monk to get it. But to do that i sacrifice an ASI/feat. Depending on your race bonuses you could be at 20 dex and 20 wisdom if you just go ASI on everything.
I think the real answer is no matter when you class away from monk you will be missing out on things. How dead set are you to multiclass out of monk? It is not required by any means.

3 Lvls of gloom stalker gives you plenty for any type of monk, not just for shadows.
Initiative bonus with wisdom, Darkvision ((increases if you already have it from your race)). Not to forget you get an extra attack on your first turn of combat and an increase in speed by 10. 3 spells that use wisdom as its main attribute.
So not sure why just shadow monks work with gloomstalker?
What I would suggest is 3 lvl in fighter, taking battlemaster as subclass. You will get action surge and superiority dices which you can use in conjunction with your ki. Both refresh on short rest also.
With action surge you could use two Attack actions (four attacks) plus Flurry of Blows (two attacks) and, during your melee weapon attacks you could use your superiority dice and your ki to apply conditions and increase the damage. If you have acess to Hex spell via Magic initiate feat each attack could benefit from a 1d6 increase in damage.
I also suggest riposte as a maneuver, so you can get another use of your reaction to attack off your turn.
You will get also a fighting style, so you can get duelist or archery.
So I have a kensei monk, he isn't sure if he wants to be a fighter or a ranger for his after 11-12 levels of monk any ideas?

17monk / 3 gloomstalker ranger.. explore that if you're insistent on multiclassing.
It is a kensai monk, not a shadow, so not as much sinergy as you would think
I think kensai monk and college of sword bard work very well.
