I think the problem with that would be that "spirits" generally only applies to distilled alcoholic drinks, and in the context of the game, the default assumption of a "Warrior of Spirits" would be more having to do with spiritual supernatural entities. "Warrior of [Noun]" seems to be in their Monk Subclass Naming Style Guide.
I agree that "Warrior of Intoxication" sounds a little clumsy. "Warrior of Inebriation" or "Warrior of Imbibing?" Maybe "Warrior of the Mystic Brew?"
At any rate, it looks like the Subclasses Update UA page has stopped being linked from the "Unearthed Arcana" page, so perhaps some quick revisions are coming down the line before it shows up again.
Ooo I like Mystic Brew too, but I can see a bunch of Drunken Masters naming their order Spirits while having consumed a large quantity of them and the name being a constant issue for them. Especially when people think the are getting ghost hunters and a team of drunk monks show up.
While I also don’t like the name, calling it intoxication does more easily open up the possibility of different intoxicants. I mean, there’s the brewer supplies proficiency which kind of bring it back to alcohol, but I do like the idea that you could be using other substances. Could be some fun flavor.
And, it’s nothing to do with any kind of language police. It’s the new subclass format is Warrior of ______ . And Warrior of Drunken Master sounds even worse than intoxication.
So i am not a fan of this name, doesn't feel in line with other Monks.

I mean watching Jackie Chan's old movies as the Drunken Master was okay, but as a subclass? It doesn't appeal me anymore than Warrior of Mercy does.
