Hosted a battle between the Cult of Sedge and the Forum Countershere(Done now). I_Love_Tarrasques has won the fight, scoring a victory for the fiendish Moderators.
I mean that sounds like something a DM would be willing to agree to. If they have qualms about it let them take some perks or lower ability scores if they find it too strong.
From my own opinions if it fits the theme and the scenario let it ride. Keep the game fun.

Can I summon a giant seahorse with Find Steed? I don't know what stats it would have but to me, theme is more important than practicality.

I would certainly allow it. Giant Sea Horse has the same CR (1/2) as the Warhorse. Additionally the word mount even shows up in the description.
