They have not mentioned anything about doing that, but they seems to be dipping back into Dragonlance with the new UA that came out and the book that's coming out soon about it, so I wouldn't say its impossible, just not likely.
You should defiantly be able to find some homebrew for it if you search within the homebrew creator. It should be easy enough to make as well, just replace the resistance and breath weapon with the appropriate type for the gemstone dragon you are mimicking.
I created a Draconic Ancestry sub-class if you're interested; adds different ancestry types with some options for damage type swapping when you add a spell (otherwise some types are very poorly represented), adds a spell list, gives it an option for being a bit more aggressive in melee, and pretty heavily changes the later features (Draconic sorcerer is no longer one of the few casters that cannot ever turn into a dragon).
I'm playing a character currently with it; a black dragonborn with topaz ancestry to create a hybrid acid/necrotic damage "black shadow dragonborn" character. Having fun with it.
Former D&D Beyond Customer of six years: With the axing of piecemeal purchasing, lack of meaningful development, and toxic moderation the site isn't worth paying for anymore. I remain a free user only until my groups are done migrating from DDB, and if necessary D&D, after which I'm done. There are better systems owned by better companies out there.

With Fizban's now out, I wonder if WoC is ever gonna update the draconic ancestry subclass to include Gem Dragons.

Since the Draconic Sorcerer was one of the options in the PHB, I wouldn’t be surprised to see it updated in the new core rule books come out in 2024.
