Is there's still no way to change your pre prepared spells for these sorcerer subclasses? The spell lists says you can change the prepared spells for ones of different classes but as far as I can tell this hasn't been implemented yet, is there something I'm missing?
Aberrant Mind - Psionic Spells. We don't currently have a method to allow swapping these spells out. We are looking at solutions for this. "Whenever you gain a sorcerer level, you can replace one spell you gained from this feature with another spell of the same level. The new spell must be a divination or an enchantment spell from the sorcerer, warlock, or wizard spell list."
Clockwork Soul - Clockwork Spell. See Psionic Spells above.
You can, in the meantime, create a homebrew subclass using either of these as a template, and swap out the subclass spells right in the homebrew features.
In addition to what Halfwing already pointed out, Sorcerers do not “prepare” any of their spells, they simply learn a limited selection of spells and always have those available without having to prepare them at all. So, when creating your homebrewed convenience hack versions of those two subclasses you can ignore anything that mentions prepared spells as they do not apply to Sorcerers at all.

The official Tasha's issues and support thread mentions that this is currently not possible:
