I have just noticed that I can't make ability scores above 30 and can't make a custom CR. When I say custom CR I mean that there will be an option to write a number like 34, proficiency bonus - +12, XP - 334,400,000. Will there be an option to do so?

Those sort of things fall outside of the bounds of the game as it is currently designed. DndBeyond is programmed to have some hard caps for things that would fall outside of the standard rules, such as having a creature with over 30 CR or any stat over 30. There are limits in character creation as well. It is unfortunately just a limitation of the current system. I highly doubt that such things will ever be added to DndBeyond, though there is nothing stopping you from making a note on the creature to give that information, like what they have done with the mythical actions from Theros, that if used, bumps the creatures CR significantly.
