As I have purchased the source books and adventures, I do not understand why I can not choose which books my characters can access. This is BS, as I can limit it in my campaigns for my players, but not for the character's that I create as the GM. This needs to be fixed as this is causing issues within my campaing as my characters have options that my players don't and I have NO WAY of knowing what the source is.
You cannot customize what books your players get options from. The setting you are probably thinking of allows you to hide the books from being able to be read cover to cover. The items and player options will still be available to select.
It's been an idea I've discussed previously, but judging by lack of response to my thread it's not looking like a priority of the developers or the community.
It's not that there is a lack of priority, it's that the devs have said they don't really know how they would implement content banning. Ban sources? Ban specific options? What about DM-allowed exceptions?

Leaving OGL 1.0(a) untouched and making SRD 5.1 CC-BY-4.0 is a great first step. The next is a promise to do the same for future editions. Here's a discussion thread on that.
I'm also a little irritated as a DM that this isn't an option. I've been trying to remove a Sourcebook I don't even like in my own library and there's no option to do so...

well that sucks, I want to completely remove a book from my sources. I purchased it I should be able to choose if I use it or not
