They aren't in the SRD. The SRD is what third parties use to make game compatible with D&D, but not quite as compatible as dmsguild.com products which can use things like beholders and illithids. D&D split the categories up so that they could protect their IP (intellectual property). It's basically lawyer speak for "we want to keep the toys that make us unique, and let you play with the other ones".
As @Lorathorn mentioned, only the rules/spells/monsters that are available in the Systems Reference Document are found in D&D Beyond (for now). Once they offer the ability to add PHB/MM/DMG, etc. (we assume via payment/subscription) then Beholders and the like will be there.
First one I've found, no beholders, eye tyrants, beholder zombies. . . nothing.
Considering that the beholder is used as the icon for filtering aberrations in the monster list; this seems like a fairly large oversight.
