Found a quick solution to this issue for anyone still having it; if you uncheck the new core rules and keep just the legacy rules checked off it'll let you access all the missing content. For some reason it seems that having both checked is blocking some content as I also could not get my subclasses under the Rogue class until I did such.

Checking both boxes do not block anything; it just enables more things.
As people have mentioned a few times in this thread, what's likely happening is that you're selecting the 2024 version of the class rather than the 2014 one. They're two separate classes as far as D&D Beyond is concerned. The "Core Rules" and "2014 Core Rules" checkboxes control which ones are shown, but you still need to actually select the one you want. They're in separate sections on the class selection screen.
