I created a subclass of the sorcerer class for a campaign that I am doing and it worked just fine for a day or so. When I went to create an NPC, I noticed two of the features that you pick an option for wouldn't seem to save the option. When I picked an option, it would remain highlighted as if I still needed to choose one. Additionally, when I minimize the class feature, it would reset to the "Choose an option" choice. However, if I would go to the character sheet, the options I chose would stack on top of each other a number of times.
This may have something to do with an optional feature I added afterwards, but it wouldn't make sense as I hadn't really added any options to them.
Are you absolutely positively sure that you set up all of those Options exactly the same? One of them is a teensy bit different at all? Like, maybe the “Is Granted” box got checked on one of them or something? (I know this one’s technically three questions, but they’re all basically about the same thing so it doesn’t count. 😉)
You obviously know how to embed images into posts. Including those would help make troubleshooting this for you easier for both of us, so I thank you in advance if you could please do so.

It is a granted feature type with the 6 options also listed in the description and a modifier for another class feature that gives the character a bonus 5ft of movement.
2. The options each have the same description and snippet, albeit changed for their respective saving throw stat. Each is checked for 'Is Granted' and every other option is blank.

That’s your problem right there. Uncheck that box on every Option.
On an Option, “Is Granted” means they automatically get it. But because you listed specific levels where the player gets to make a choice of options, those two concepts (automatically granting every Option vs player chooses limited number of Options) are conflicting and the system is going into TILT! trying to figure out how to do both, and since it can’t…. Well, you see the results.
In future, if you have any further trouble with setting up Options, or they start giving you fits again, check out the Homebrew Subclasses & Species FAQ question #1 first. The answer to that question contains a full walkthrough on setting up Options. You’ll probably be able to troubleshoot the issue much faster than posting and waiting for a response and the back and forth like this.
