When helping out on of my players get up their Aasmiar character we noticed that she could not select the fallen trait/sub-race. Only the variant was available. Is there something that is going wrong or have i missed something in character creation.
I have purchased all the books and have access to all books given to all players in my group. Even when i go to choose for myself variant is the only choice. After looking at the campaign I did figure it out for some reason my campaign had lost content sharing. It has been fixed and is now working.

Once you purchase the Aasimar content from Volo's Guide, it will automatically pop up in the race selection. This is similar to how you can select "Wood Elf" under "Elf." Hope that helps!

Books have been bought.
Content sharing has been enabled in campaigns.
Character races have been changed.
Individual options from books have been bought.
It is conceivable that a new user may not know how to do any of these things. "How?" Does not narrow down which of the several actions passively mentioned in this thread they are asking about.
The first person was talking about the 5th thing on the list (which wasn't even specifically discussed the when they asked, but is alluded to in point 1).
And since they haven't clarified their question in the 2 years since they asked it, they probably figured it out...

When Mordenkainens Monsters of the Multiverse came out, both Volos and the original Mordenkainens were archived and are no longer purchasable. You can buy the new Aasimar from the new Mordenkainens, or homebrew to older versions.

There are no subraces for the Aasimar found in Mordenkainen’s Presents. Instead, you have choices at various levels.
Only the VGTM Aasimar has actual subraces, but that book is no longer sold.
In the MOTM Aasimar, those subraces were combined into the race’s Celestial Legacy feature instead. There you’d want to pick the Radiant Consumption option.
The 2024 PHB Aasimar likewise has a Celestial Revelation feature, but for this one you’d select Inner Radiance instead.

The aasimar subraces are in VGtM. Has he or someone in the campaign bought it?
Aasimar is from Volo's Guide, It needs a purchase.

Nevermind - I found it. I had to change race to the subrace selection.
