The ice spider (and ice spider queen) should have Expertise (double proficiency bonus) in the Stealth skill because they use the statistics of a giant spider with modifications.

No, it's part of the original book. There wasn't a full stat block for it in the book though. There is a section that says 'use the Giant Spider with the following changes...'. DnDBeyond took the info and created a stat block for it. If you have bought the SKT book on DnDBeyond, you will have the stat block. No addon purchase.
