I chose the Rogue class but Thieves' Cant is not listed under my proficiencies for Languages.
It is listed under a features and Traits. Not sure why it doesn’t also show up under languages.
I assume because it's not a language that anyone can learn; it's a specific feature of the Rogue. Yes, it allows you to secretly communicate with others who share this trait, but it's more akin to telepathy, as it's not using a separate languge; it is using an existing language to convey secret information. Much akin to those code sentences you see in spy movies. For anyone else, it sounds like you are talking in a language they might understand, but you hide the meaning in certain phrases and code.
tl;dr: Thieves' Cant is not a language, it's a coded communication using an existing language.

But you have the ability to add thieves' cant as a language via clicking on the Proficiencies & Languages box > Add New Proficiencies > Language > Thieves' Cant. So if you can add it that way I'm not sure why it isn't added by picking Rogue.
