I've just made a new character and set them to level 5 but my proficiency bonus hasn't changed from 2+ , i've tried setting the character to higher levels to see if it fixed the problem and it remains stuck at 2+
If anyone knows how to fix this that will be great
Proficiency bonus is +2 from 1st level, at 5th level it increases to +3.

D&D Beyond FoundersDid you change the XP/level and not increase the level in a specific class?
In the image below, I have the character set to track XP and have set the character level to 5 (section circled as 1).
The character is only level 1 barbarian though (see 2), despite having sufficient XP for level 5.
This is indicated by the green 4 with an up arrow.

I also have this problem, but, even with the right level selected, it is still at +2.
I'm guessing that you don't have enough XP to be level 5 (at least 6,500). You'll need to Manage XP in the Class page of the Character Builder.
