In the drop down menu for selecting the sub class, only one option is available for each class. example - for Cleric I can only chose Life Domain; or for Fghter I can only choose Champion. Also the only feat available was grappler. Anyone else run into this?
I've purchased the Player Handbook yet I only see Way of the Open Hand for the monk, for example. When I go on rules, player's handbook, i see the content there. How do I fix this?
As Filcat says, it is likely that your browser has the link to your content cached, which can be fixed fairly easily, by clearing your browser's cache.

So can I check somewhere which subclasses can I expect if I buy certain packages? Or the best would be if I could buy all subclasses in a bundle! Can I do that?

Take a look at the book in the marketplace — see for example Xanathar's Guide at https://www.dndbeyond.com/marketplace/source/27. You can unlock specific subclasses from each book — or the way to buy things in a bundle is to buy the book.
And previous purchases of sections/parts of that book go towards the final purchase. So if you buy all the subclasses, the new total for the book would be ($30-subclass cost).
Actually cost far less to buy the bundled subclasses then it is to buy each individually. but book content always cost 10$ if you count all subclasses, adventures, magic items and all as their bundles it actually cost far less to just buy the book instead. aside from scag which i bought only a few bundles in it. the rest are just betterly bought in their entirety.

D&D Beyond can be used for free and contains information from the following "free to use" sources published by Wizards of the Coast: D&D 5th edition SRD, D&D 5th edition Basic Rules, and Elemental Evil Companion.
Content from other sources, such as the Player's Handbook, Dungeon Master's Guide, or Monster Manual, will need to be purchased from the Marketplace or accessed via another user sharing content with you via their Master Tier Subscription.

It's worth noting that any purchases you make are automatically discounted off the purchase price of the Legendary Bundle.
For example, if you purchase the Player's Handbook for $29.99 then the cost of the Legendary Bundle is reduced by $29.99.
This allows you to purchase content a bit at a time, without being worried that it will cost you more money in the long run.
