Sorry for reviving a dead thread, but I found this method to view sidekicks of higher levels:
Create a new Homebrew monster, and you can search in the name field for "spellcaster", "expert", or "warrior", which will show the different levels. Select the type and level you want, and hit "Create". You now have an independent copy of the sidekick, that you don't need to view in a character's Extra tab.
The sidekick can be any type of creature with a stat block in the Monster Manual or another D&D book, but it must meet these prerequisites: • Its challenge rating must be 1 or lower. • The two of you must be friends.
so how do you take something, say like a rust monster, and apply say, the warrior sidekick over it?

Do you mean on DDB or generally? I don’t find that wording in the Sidekicks section of Dragon of Ice Spire Peak. There it says sidekicks can be “any race.” I’m guessing your quotation is from the Sidekick UA. Those Sidekick rules have not be implemented here.
Ahh, you are 100% correct. That's exactly where I got that from. That makes more sense.
Not for nothing but there is an insane amount of confusion around this topic.
It took me well over an hour just to figure out how to even get a sidekick working. I had no idea that an arbitrary adventure enabled it.. there's no mention of it in the extras spot. Then after I paid to enabled them, I now just realize that it isn't the sidekicks I thought and I can't use them anyway. That is on me, to be fair, but still wasn't an awesome experience.
Now I am reading you can manually stitch together a sidekick with a monster in a Homebrew, and get the UA experience. That seems closer to ideal. Maybe we can write a script to do it for us?
