Is there a way to add "Firearms" as a proficiency to a character sheet, or must you choose Pistols, Rifles, etc. separately? No big deal either way, but I wanted to make sure I wasn't missing something.
I only have one character that took the Critical Role feat Firearms specialist. That gave him proficiency in firearms in general, not specific types. I don't know how other rules available on here may deliver firearms proficiciency, but I think it could be a bit of both. Much like there are simple and martial weapons, I see firearms as a class of weapons where some feats or subclasses could grant you broad proficiency in all firearms, and other feats and classes may focus you onto a particular type of firearm (pistol, rifle, etc).
Just checked, from what I can tell the only other official (actually technically only official) way of getting firearms proficiency outside of the Critical Role content is the Gunner feat in Tashas, which also grants broad proficiency in all types of firearms.
On the character sheet you can add each firearm individually Via the "add new proficiency" button when you click on your weapon proficiencies on the left side of the character sheet. You can also give your character a homebrew feat that gives you access to generalized firearm proficiency but that falls outside of being just on the character sheet.
If you are playing a character that doesn't have generalized firearm proficiency but you want to use firearms then getting the single proficiency for each individual weapon makes sense, alternatively you could take one of the feats that gives you that option plus other things, like Gunner or Firearms specialist. (Do note that only the gunslinger class from critical role which is technically a homebrew, are the only guns that have a misfire score. The other guns -- even those in the published critical role book -- don't have a misfire score.)

Artificers also get firearm proficiency. There is the caveat of “if firearms technology has been discovered on your world”or something.
